Kip’s Tacos to add baked potato truck

COLUMBIANA — Move over tacos, as Kip’s is gaining a sister truck just in time for fall.
According to owner Jacob “Kip” Grimm, the smaller of his food trucks, which currently sells Tex-Mex street food favorites, will be converted for fans of baked potatoes after the new bigger taco truck is complete.
Still somewhat in its infancy, Kip’s Tacos has become a familiar sight at breweries, gas stations and private corporate events across the tri-county area.
Grimm, wife Logan and their two children make Columbiana home.
With almost one year of business under their collective belt, the Grimms are building a larger truck for their growing taco business from a cargo trailer.
Their plans include converting the much smaller taco truck to Kip’s Taters. As Grimm explained, “I had started building (the current taco truck) in 2023. We started operating it in July.”
After cooking for a decade for Primanti Brothers while in college, Grimm became a corporate trainer with the restaurant company before he decided to go into business for himself after expanding his attention to the worlds of barbecue and Tex-Mex cuisine.
“I wanted to do my own thing,” he continued. “I write my own menu, have specials and put my own twist on Tex-Mex favorites
Kip’s Tacos also serves burritos, burrito bowls, quesadillas and nachos with Grimm’s unique twist on the popular dishes.
This includes Grimm making all his salsas and sauces from scratch. The only thing he admits that he doesn’t make are the tortillas and taco shells.
Fresh vegetables also are Kip’s hallmark.
Kip’s also is a frequent visitor as a pop-up at Columbiana’s Garden of Eatin, where it is next expected to be from 2 to 7 p.m. Monday.
